Also known as “bitter orange”,“sour orange”. Seville oranges are the variety of orange whose peels are traditionally used in orange marmalade. The juice tends to be very sour and closer to lemon juice than that of sweet oranges. It is the essential oils in the skin—some of which ideally gets into the juice during extraction—that Seville oranges are most prized for.
