A lime wedge is a wedge-shaped cut of a fresh lime that typically corresponds to one sixth of the fruit. To cut lime wedges, trim off the tips (poles) of the lime. Bisect the lime from pole-to-pole. Lay one lime half flat and slice two times from pole-to-pole, at 60-degrees and 120-degrees to yield three even pieces.
