rhubarb syrup

Rhubarb syrup is generic for a home-made sugar syrup flavored with rhubarb stalks. To make, simmer chopped rhubarb stalks in water until soft (around fifteen minutes) then strain out the solids, stir in sugar and stir to dissolve. The proportions or rhubarb, water and sugar depend a bit on the intended use. If you're looking for a simple syrup substitute, then you'll be using approximately equal proportions of water and sugar and only enough rhubarb so that the water still covers it in your saucepan. Can be varied to taste.
