Also known as “gold Jamaican rum”,“jamaican rum”,“brown jamaican rum”,“old jamaica rum”,“aged jamaican rum”. Amber jamaican rum is generic for the heavy-bodied, rich, flavorful pot still rums fermented, distilled, and aged in Jamaica. Note: except for the unaged white overproof rums popular with the natives (and relatively uncommon in cocktails), Jamaican rum is typically aged, even if it is subsequently stripped of its color through filtering. If a recipe calls for “aged Jamaican rum”, go for quality, not color. Note that most amber jamaican rums, today, are bottled at lower proof than in the past, and are now designed for easy sipping. It can be useful to blend a judicious amount of younger, higher proof jamaican rum in with the amber rum to restore more of the funk and aromatic profile that comprise the jamaican style.
