Rich demerara syrup is a 2:1 syrup made with so-called “raw sugar”, which is not raw, but is less processed than refined sugar. Raw sugar—also known as Demerara sugar or muscovado sugar (the distinctions are academic for the purposes of mixology)—retains a little more molasses flavor than refined sugar, and tends to have a larger grain. ======== Combine in a sauce pan: 250 g water 500 g demerara sugar Heat to a simmer. Shut of the heat. Stir to dissolve. Cool and bottle. Store in the refrigerator. ======== Rich demerara syrup has a brix of 66 (weight of sugar content) and a sweetness of 92% (weight in volume).
