Also known as “raw sugar syrup”,“demerara sugar syrup”,“muscovado sugar syrup”,“demerara simple syrup”,“turbinado sugar syrup”. Demerara syrup is generic for a simple syrup made with so-called “raw sugar”, which is not raw, but is less processed than refined sugar. Raw sugar—also known as Demerara sugar or muscovado sugar (the distinctions are academic for the purposes of mixology)—retains a little more molasses flavor than refined sugar, and tends to have a larger grain. ======== Combine in a sauce pan: 250 g water 250 g demerara sugar Heat to a simmer. Shut of the heat. Stir to dissolve. Cool and bottle. Store in the refrigerator. ========
