rhum agricole
Also known as “French-style rum”. Rhum agricole is the generic category for rums distilled rum exclusively from fermented cane juice to relatively high proof, and is particularly associated with the rums of the French West Indies (Martinique, Marie Galant and Guadalupe), which are at least partially under A.O.C. protection. Fundamentally, rhum agricole is distinctive for being produced entirely from fresh, fermented sugar cane juice, not from fermented molasses. This distinction is borne out in the flavor of rhum agricole, which is more vegetal in character than molasses-derived rums.
