martinique rum
Also known as “Martinique rhum”. “Martinique rum” is ambiguous for the rums of the island of Martinique, which have a dry complex vegetal character and which, today, enjoy A.O.C. designation. Martinique rums are “rhum agricole”—rum produced from fermented sugar cane juice, as opposed to fermented molasses. While the native spirit is an unaged, white rum, typically bottled at 100-proof, most distilleries also produce aged rums primarily for export. The principle point of confusion is whether you are looking for an unaged rhum or an aged rhum. The answer may lie in a judgment call, but most mixed drink recipes that call for “Martinique rum” probably have a amber or perhaps even a vieux aged rhum in mind.
