sesame seed syrup

Sesame seed syrup is a homemade syrup infused with sesame. Very rare in cocktails but seen in the obviously-named SESAME COCKTAIL. Make as follows: Place 2 tbsp sesame seeds (or more or less, to taste) in a saucepan with 1 cup sugar and 1 cup water. Bring to a boil, stirring until sugar is dis-solved. Lower heat, cover saucepan, and simmer for 2 minutes. Remove saucepan from heat and, keeping it covered, let sit at least 2 hours before straining and bottling. It should keep about a month in the fridge. Note: You may choose to gently toast the sesame seeds ahead of time for a nuttier effect.
