ceylon cinnamon-infused sugar syrup
Also known as “true cinnamon syrup”,“mexican cinnamon-infused sugar syrup”. Ceylon cinnamon-infused sugar syrup is a home-made preparation of sugar syrup infused with the bark of “true cinnamon” from Sri Lanka (also known as Mexican cinnamon due to its integrality in Mexican cuisine). Crush 3 (Ceylon) cinnamon sticks and place in a saucepan with 1 cup sugar and 1 cup water. Bring to a boil, stirring until sugar is dissolved. Lower heat, cover saucepan, and simmer for 2 minutes. Remove saucepan from heat and, keeping it covered, let sit at least 2 hours before straining and bottling. It should keep about a month in the fridge. This syrup will have a milder character to cassia syrup.
