fino sherry

Fino sherry is one of the principal styles of dry sherry (the other being oloroso). Unlike oloroso, fino sherry is unoxidized. Fino is barrel aged in a manner to inhibit oxidation. Once a bottle of fino sherry is opened, it should be consumed quickly; half bottles recommended.
