amontillado

Amontillado is the generic category for a de facto style of unsweetened sherry that falls between the somewhat more clearly defined fino and oloroso styles. It is essentially a mature fino or manzanilla sherry that has been subsequently (deliberately) oxidized or partially oxidized. The best amontillados can be spectacularly complex. Once opened, a bottle of amontillado is somewhat more shelf-stable than fino, but should still be consumed fairly quickly.
