cava

Cava is a defined (DO) style of sparkling wine nominally from Catalonia, although Spanish law permits sparkling wines from a slew of Spanish wine regions to be laveled “cava”. Most cava is white wines produced from Macabeu, Parellada and Xarello grapes. Other grapes can be used, too. Rosé (rosado) cava is tinted through the addition of red wines. Note that cava is sold in various degrees of sweetness.
