sencha
Sencha is the preeminent tea of Japan, produced by steaming the leaves to arrest oxidation and then dried. Flavor is intensely vegetal. The (tannic) bitterness of sencha is strongly related to the temperature of the water in which it is brewed. Cold brewing sencha or brewing at 175º-185º F will yeild a minimally bitter brew. Use of boiling water or near-boiling water will yield an intensely bitter brew.
