A great deal of contemporary light-bodied rum is distilled on St. Croix, all of which is highly refined, “pure” and straightforward, “post-Bacardi” rum. Cruzan (CREWZ-shun) is a noted producer. Not to be confused with “santa cruz rum” or “st. croix rum” in older recipes, which reference an earlier pot still style from the same island, now defunct.
