Yuzu purée is generic for a preparation of fresh cherry fruit with optional sugar, dilutants (water or juice) and preservatives. Yuzu purée is, commercially, an obscure ingredient associated with confection-makers, so availability may be difficult. Typically, yuzu purée will have the consistency and character of lemon curd, and can probably be home-made following the same basic process with yuzu fruit.
