Also known as “bean curd”. Tofu is generic for a diverse array of products derived from coagulated soy milk. The main factor distinguishing different expressions of tofu is how much water remains in the curd, but the consistencies are also controlled through processing technique. By itself, tofu has little to no flavor. Rather, flavor is added through the salts and acids used to curdle the soy milk, or through other modifications. Tofu is also available in smoked, pickled, dried and fermented versions, and with different seasonings.
