Truffle is generic for various aromatic, wild, tree-growing, lump-like fungi employed for culinary purposes. Some truffles, particularly those from particular regions of Europe, are fantastically expensive. Others, such as those from the Pacific Northwest of the US are less so. Luckily, truffles are intensely flavored and generally used raw in dribs and drabs. One common technique is to shave the truffle paper-thin with a purpose made tool.
