Also known as “aceto balsamico di modena”. Balsamic vinegar is a class of condiments originating in Italy. Authentic, traditional balsamic vinegar—Aceto Balsamico Tradizionale—is protected, rare, expensive, and is actually a grape juice syrup that is aged at least twelve years in wood barrels. All other “balsamic vinegar” is an industrial imitation that combines wine vinegar with caramel coloring and other additives to yield a practical, large-scale substitute.
