The Scarlet Ibis Trinidad Rum

Bespoke 3-5 year old Trinidad rum blend bottled in Austria for Death & Co. (New York City). From importer Haus Alpenz: “This bespoke blend of three to five year aged Trinidad rums highlights the distinctive notes of the island’s small cask rum production. The rich flavors drawn from the sugarcane are considered reflective of Trinidad’s diverse terrain, ranging from lush mountains to rainforests and rolling plains. Originally commissioned as a private barrel project for Death & Co in NY, additional stock sold as available.” Notes Jeff “Beachbum” Berry (“Beachbum Berry Remixed, p. 209): “Death & Company had this 98-proof blend of Trinidad rums specially tailored for them, so that they could craft cocktails like [the Punky Monkey]. There’s no real substitute for it (that’s why they had to have it made); the closest pinch-hitters we can think of are Sea Wynde or Santa Teresa 1796.” “Brown rum”, “amber rum” or “gold rum” is generic—and vaguely so—for a brown- to golden-hued sugarcane spirit of various styles without regard to origin. An appealing brown molasses rum (without too much caramel coloring) is implied, but the choice is up to you. Regarding the term “aged rum”: technically, “aged rum” is generic for ANY style of rum other than unaged or “white rum”, and is therefore ambiguous because rums of vastly different style are available in aged form. Note that the color of rum is not necessarily indicative of aging insofar as much colorless rum is actually aged and then stripped of its color through filtering. Moreover, caramel color is often introduced to rums to darken their coloration. Generally, if a recipe simply specifies “aged rum”, an appealing brown molasses-based rum is implied.
