Depaz Blue Cane Rhum Agricole

Aged rhum agricole is generic principally for the barrel-aged rums distilled rum exclusively from fermented cane juice to relatively high proof, and is particularly associated with the rums of the French West Indies (Martinique, Marie Galant and Guadalupe), which are at least partially under A.O.C. protection. Fundamentally, rhum agricole is distinctive for being produced entirely from fresh, fermented sugar cane juice, not from fermented molasses. This distinction is borne out in the flavor of rhum agricole, which is more vegetal in character than molasses-derived rums. Aged rum agricole from the French West Indies is commonly produced in the 1-2 year amber “élevé sous bois” form and in an older, darker “vieux” form (although the terminology varies from brand to brand), and usually (ideally) bottled at 45º or 50º ABV.
