Crème de cassis is a generic class of respected traditional liqueur, usually French (a specialty of Bourgogne) but also made elsewhere. Produced by macerating black currants in either grape brandy or neutral spirits and then sweetening and filtering. Notable in the Kir Royale. “Cassis de Dijon” is crème de cassis specifically from the town of Dijon in Burgundy, using currants from the immediate region.
