Seville orange juice is the fresh squeezed juice of Seville or bitter oranges, the varieties whose peels are traditionally used in orange marmalades. The juice of these oranges tends to be less sweet and closer to lemon juice than that of sweet oranges. It is the essential oils in the skin—some of which ideally gets into the juice during extraction—that Seville oranges are most prized for.
