Gin Gin Mule Ginger Beer [Audrey Saunders]

This recipe produces a fresh, flat, non-fermented ginger infusion that is a superior alternative to most commercially-bottled ginger beers in mixed drinks and critical to a couple of Audrey Saunders’ best-known drinks. ======== Combine in a pot: 1 quart boiling water 4 oz (by volume, or 120 ml) fresh ginger, finely grated (do not peel) 1/2 oz lime juice Immediately remove from heat. Cover and infuse one hour. Add: 2 tablespoons light brown sugar Stir to dissolve. Fine-strain, pressing firmly on solids, cool and bottle. Store in the refrigerator. Shake before use. Should last up to two weeks, but the ginger’s potency fades, so use quickly. ======== Yield: 1 quart
