Also known as “Grenadine (50 brix)”. This homemade grenadine syrup is ahistorical, but has proven remarkably delicious and practical, provided you can purchase pomegranates in your marketplace. The syrup provides fresh (not cooked) pomegranate flavor and bright red coloring to your drinks, and sweetens exactly like simple syrup. Highly recommended for elevating the Jack Rose and Monkey Gland. Testing has shown that this homemade syrup freezes well, particularly under vacuum, and, due to the high sugar content, it also thaws quickly, making freezing a viable way to extend its shelf life indefinitely for many applications. ======== Combine in a blender: 250 g fresh pressed pomegranate juice With the blender running, add: 162 g sugar Blend until sugar is dissolved. Add: 1 g citric acid 2 orange twists (expressed) Stir to combine. Refrigerate. ======== Note: to get fresh pressed pomegranate juice, you simply buy pomegranates, cut them in half, and juice them like an orange. (Be careful to protect your clothing.)
