Generic for fresh lemon juice that has been processed to remove most of the pectin, pulp, pith—any particulate matter that makes the juice cloudy. Multiple strategies for clarification exist: enzymatic degradation and fining, freeze/thaw, agar agar, possibly others. A centrifuge is often employed where volume and efficiency are valued. Clarification for citrus juice is primarily a visual effect and can result in more vibrant color in mixed drinks. Clarification also affects texture (smoother mouthfeel), can reduce bitterness (nuance), and can improve shelf-life. Clarification definitely improves performance with carbonation or carbonated ingredients by dramatically reducing nucleation sites throughout the drink. Clarification is also de rigueur when adding citrus to cordials and some syrups.
