Sour beer encompasses a number of traditions and modern interpretations of traditions of beers exposed to wild yeast during brewing and/or are intentionally soured through the introduction of secondary fermention involing fruit. Some sour beers are mildly sour, some strongly so; often these beers exhibit more yeasty character than bitter, and often are bottled or served with added fruit syrup or other flavoring for balance.
