Pineapple juice is fresh-pressed or canned pineapple juice. Note: some commercial processed pineapple juice has extra sweetening; only use unsweetened pineapple juice in cocktail and mixed drink recipes unless they specify otherwise. Fresh pineapple juice is extracted by passing fresh, ripe pineapple through a juice extractor (juicer) or by muddling fresh cut pineapple chunks and then straining out the solids.
